Yakusugi

  • Before using the sake container, please remove the scum from the container by replacing the water every day for about 3 days (with the top stopper removed). When using it, the sake can be left in the bottle, but since it will have a strong oak aroma, it is best to add the sake about 1-2 hours before drinking at first. If you prefer a barrel aroma, increase the time of laying down and aromatize to your liking.
  • Distilled spirits are recommended for the liquor to be placed in the barrels. (Shochu (various kinds), Awamori, whiskey, bourbon, rum, tequila, gin, vodka, etc.)Sake may be added, but sake (brewed sake) has a low alcohol content and may spoil.
    Please be careful with the number of days it is allowed to sit in the cask. We recommend that you drink it on the same day.
  • Please plug the barrel with the transparent rubber (silicon material) of the attached barrel stopper (bottom stopper) still attached.
  • Do not store where children can see. Minimum drinking age is 20 years old. Do not drink during pregnancy or lactation.
  • Do not place water or alcoholic beverages on TVs, electrical appliances, documents, clothing, fabrics, folded mats, floors, carpets, etc. when the product is filled with water or alcoholic beverages. Do not use boiling water, open flames, microwave ovens, refrigerators, dishwashers, etc. when using alcoholic beverage containers.
  • After using or storing the sake product
    (For distilled spirits: Remove the top stopper, fill the vessel about one-fourth full with water or white liquor, and store out of direct sunlight. However, when storing with water, please change the water once a week. (If white liquor is added, it is not necessary to change the water.)
    (For brewed sake: Empty the barrel, close the top and bottom stoppers tightly, and store out of direct sunlight. If there is any brew left in the keg, transfer it to a plastic bottle and store it in the refrigerator to enjoy the aroma of the keg in good condition.)

Remove the scum from the barrel

Open the top stopper and tighten the bottom stopper tightly.

Fill water through the hole at the top.

Change the water every day for about 3 days.
